Pure pork fat from these pastured, heritage-breed animals. Rendered into lard, as a culinary fat it is unrivaled, outstanding for baking flaky pie crusts or high-heat cooking from searing meats and seafood to flavoring potatoes.
To render, simply slice in small pieces and slow cook on low heat – easiest in a crock pot – until the cracklings have turned brown and sunk to bottom. Takes about 4-5 hours. Strain and store lard in fridge for a month, or freezer for a year.
